Ingredients
Buy
- 1.5 cups quinoa
- 1 lb
- 2–3 large , chopped thinly
- 1/2 red , chopped
- 1/2 , chopped
- 1 large , chopped
- 1–15 oz can
- 1–6 oz can
- 1 cup frozen
On Hand
- 2 cloves, minced
- 1 tablespoon
- 1 teaspoon
- 1/2–1 teaspoon
- 1/4 teaspoon pepper
Instructions
- To cook quinoa, boil 3 cups of water, sprinkle in a little , and add 1.5 cups of quinoa. Bring to a boil again, then cover and turn heat to low. Cook for 10-15 minutes or until the liquid is gone.
- Chop red pepper, , and
- Brown your , then drain and transfer to a bowl.
- Add a little olive oil to your pan along with the , red pepper, , , and . Stir, then add the , , , and pepper.
- Cook for 5-8 minutes over medium heat, stirring occasionally, or until the carrot is somewhat soft. (You can cook longer if you want the completely soft).
- Add the , , , cooked quinoa, and frozen .
- Sir to combine and heat for a few more minutes. Serve.
