Ingredients

Buy

  • 1 lb
  • 1 cup fresh
  • 0.5 cup frozen
  • 1 cup fresh
  • 1-4 cloves
  • .5 cup
  • .5 cup grated
  • 1 package penne

On Hand

  • .5 cup (more as needed)

Instructions

  1. cook according to package directions (5 minutes in microwave)
  2. Add , , , and to food processor. Process until smooth, adding extra oil if needed.
  3. Add cheeses to processor and blend until smooth. Add pepper and salt if needed.
  4. Serve on top of , hot or cold, or as a spread on sandwiches or dip for veggies.

Notes

  • Start with less and build to your family’s preference.
  • Add more if you think the veggie taste is too strong.
  • Use freshly grated – not the shelf stable shakable kind.
  • Do not use frozen . I’ve made the mistake and it gives a very odd texture.
