Ingredients
Buy
- 1 lb
- 1 cup fresh
- 0.5 cup frozen
- 1 cup fresh
- 1-4 cloves
- .5 cup
- .5 cup grated
- 1 package penne
On Hand
- .5 cup (more as needed)
Instructions
- cook according to package directions (5 minutes in microwave)
- Add , , , and to food processor. Process until smooth, adding extra oil if needed.
- Add cheeses to processor and blend until smooth. Add pepper and salt if needed.
- Serve on top of , hot or cold, or as a spread on sandwiches or dip for veggies.
Notes
- Start with less and build to your family’s preference.
- Add more if you think the veggie taste is too strong.
- Use freshly grated – not the shelf stable shakable kind.
- Do not use frozen . I’ve made the mistake and it gives a very odd texture.
