Instructions
- Cook rice
- Add to rice
- In a large bowl, combine , pickle , and
- in a small bowl, combine , ground yellow , to make spice blend
- In a non-stick pan, heat olive oil on medium high
- add , season with salt and pepper, cook 3-5 minutes until lightly browned
- add 2 tbsp of water. Cook 30 seconds, until most of the water has cooked off
- add copped , season w/ salt & pepper. Cook 1-2 minutes until softened
- Transfer to a bowl and cover with foil to keep warm
- wipe out pan
- Pat the chicken dry with paper towel and chop into bite-sized pieces
- add to bowl, season with salt & pepper
- add and spice blend, toss to coat
- heat a thin layer of oil on medium-high
- once oil is hot enough that a pinch of cornstarch sizzles, add the coated chicken in an event layer
- cook without stirring 3-4 minutes until browsed
- continue to cook, stirring frequently, 3-4 minutes until browned and cooked through
- discarding any oil from pan, transfer the cooked chicken to the bowl of creamy , stir to coat
- serve the dressed chicken with rice and cooked
