  • Cook rice

  • In a large bowl, combine , pickle , and
  • in a small bowl, combine , ground yellow , to make spice blend
  • In a non-stick pan, heat olive oil on medium high
  • add , season with salt and pepper, cook 3-5 minutes until lightly browned
  • add 2 tbsp of water. Cook 30 seconds, until most of the water has cooked off
  • add copped , season w/ salt & pepper. Cook 1-2 minutes until softened
  • Transfer to a bowl and cover with foil to keep warm
  • wipe out pan
  • Pat the chicken dry with paper towel and chop into bite-sized pieces
  • add to bowl, season with salt & pepper
  • add and spice blend, toss to coat
  • heat a thin layer of oil on medium-high
  • once oil is hot enough that a pinch of cornstarch sizzles, add the coated chicken in an event layer
  • cook without stirring 3-4 minutes until browsed
  • continue to cook, stirring frequently, 3-4 minutes until browned and cooked through
  • discarding any oil from pan, transfer the cooked chicken to the bowl of creamy , stir to coat
  • serve the dressed chicken with rice and cooked
